Ingredients
1/2 pound small mushrooms
1/3 cup olive oil
3 tablespoons wine vinegar
2 tablespoons lemon juice
3/4 teaspoon salt
1/2 teaspoon Tabasco sauce
1/8 teaspoon thyme
2 cups water
3 tablespoons finely chopped parsley
Directions
Wipe mushrooms with damp cloth then trim off bottom and cut into halves lengthwise.
Combine oil, vinegar, juice, salt, Tabasco, thyme and water.
Bring to boil and simmer 5 minutes to blend flavors.
Add mushrooms to boiling liquid then cook slowly for 5 minutes.
Sprinkle with chopped parsley then chill and drain before serving.
