This recipe is easy, takes only a few minutes, and hits the spot.



Ingredients

1 cup fresh or frozen blackberries
1/3 cup water
1 teaspoon lemon juice
pinch salt, optional
Sweetener equivalent to 4 tablespoons sugar
3 1/2 tablespoons ThickenThin not/Sugar thickener


Directions
Makes approximately 3/4 cup.

1. Put berries in a 3-quart saucepan and just barely cover with water, cover and simmer until softened and juicy.

2. Mash to desired texture. Use well-mashed fruit for a jam-like spread, but leave recognizable pieces if you want it to resemble preserves.

3. Add lemon juice, salt and sweetener to taste.

4. Add ThickenThin not/Sugar thickener to thicken to slightly less than desired thickness as it will continue to thicken somewhat as it cools. Leave to cool and store in a refrigerator.

NOTES: Cooking time: while you need to cook the fruit only enough to soften it, your fruit spread will keep longer if the fruit is cooked thoroughly.

This recipe, without sugar to preserve it, will keep only a few weeks even when refrigerated.
